Old fashioned apple pie with a unique bottom crust

2 lb Granny Smith apples
2 lb Braeburn apples
1 tsp ground cinnamon
3/4 cup granulated sugar
1/2 cup butter
1 cup firmly packed light brown sugar
2 refrigerated pie crusts
1 egg white
1. Preheat oven to 350 degrees. Peel apples, cut 1/2 inch wedges. Toss apples with granulated sugar and cinnamon.
2. Melt butter in 10 inch skillet over medium heat; add brown sugar and cook, stirring constantly, 1 to 2 minutes until sugar is dissolved. ( do not overcook; it will caramelize) Place pie crust on top of mixture. Spoon apple mixture over pie crust and top with remaining pie crust. Whip egg white until foamy . Brush on pie crust and sprinkle with 2 tbsp granulated sugar. cut 5 slits in the pie crust.
3. Bake at 350 degrees for 1 hour to 1 hour and 10 minutes until golden brown and bubbly shielding with aluminum foil for the last 10 minutes if necessary to prevent excessive browning. Cool on wire rack 30 minutes before serving. Serve with butter-pecan ice cream or ice cream of choice.
